I love a good twist on a classic dish. Chicken fajitas have always been one of my go-to easy meals, and I often order them whenever I'm at a Mexican restaurant, so the other night, I had the idea to take a classic dinner favorite and make give it a twist! These roll-ups would be great as a dinner, or even as an appetizer or party snack. I also included two dipping sauce recipes for an extra layer of flavor.

Yep, another flatbread! I wasn't lying when I said my husband and I LOVE a good flatbread, and we're always coming up with different combinations. This time, we tried out a caramelized onion and bacon flatbread, and let me tell you: it did not disappoint. This is certainly going to be a staple in our house - especially when we need a quick & tasty weeknight dinner and are in the mood for a cheat meal!

During the colder months, like most people, I love a good slow cooker meal. Especially these days, while working from home, I love the smell of my dinner cooking, and having something warm and comforting waiting for me when I've logged off for the day. The best thing about this chili isn't the warm comforting flavors (though that's definitely a close second), its healthy and easy to throw together, making it perfect for meal prep as well.

My husband and I love a good flatbread - what's better than buttery naan topped with your favorite ingredients? Nothing! My husband and I have been experimenting with lots of topping combinations, but we kept coming back to this BBQ version. The best part? It's a great way to enjoy summery barbeque flavors without having to bear the cold to man the grill 😉
Turkey, Butternut Squash & Sage Lasagna
Butternut squash is most definitely one of my favorite ingredients to cook with, especially in the fall. I feel like I'm in the minority, but I love savoring every moment of the Thanksgiving season and I can't bring myself to jump into Christmas too soon. This lasagna was inspired by Thanksgiving flavors, and is creamy and so so delicious! Seriously, I think this is one of my favorite dishes so far. For you Ricotta cheese haters (like me) there is NO Ricotta, and this lasagna would be easy to make vegetarian but omitting the turkey and adding more butternut squash. This is a great make-ahead dish to serve if you are hosting visitors over Thanksgiving week!
Slow Cooker Chicken Tortilla Soup
I'm definitely a taco person, and I'm definitely a soup person. As the days get shorter, and my dinners get lazier, I tend to rely on my slow cooker a LOT and that means soups, stews and chili. Chicken Tortilla soup is definitely a favorite of mine, and my husbands love of tacos tends to inspire many of my recipes, so this is a great combination of two of our favorite meals. This soup is perfect for a chilly night, but the spicy flavors make this a great soup to be enjoyed year round. The best part? Minimal prep!
Slow Cooker Broccoli Cheddar Mac & Cheese
If you've ever had Panera's Broccoli Cheddar Soup or Mac and Cheese, you were probably just as excited as I was when they came out with Broccoli Cheddar Mac & Cheese - I don't think there has ever been a more perfect combination in the history comfort foods. After trying Panera's new combination, I decided to try my hand at making my own version. I won't call it a copy-cat, because it's not the same as Panera's version, but it is definitely just as tasty!

Beef Shakshuka with Feta & Naan
Shakshuka is a Mediterranean dish consisting of eggs poached in a herby tomato sauce. I originally discovered a "beefed up" version of this dish through a meal delivery service, but my husband and I loved it so much, I kept tweaking it until we created this dish that has become a staple in our household. It's comforting, filling, but the herbs and spices make it feel fresh. We tend to make this more often in the colder months, but it's a great meal to serve year round for dinner, lunch or even breakfast!
