Slow Cooker Sweet Potato & Turkey Chili

During the colder months, like most people, I love a good slow cooker meal. Especially these days, while working from home, I love the smell of my dinner cooking, and having something warm and comforting waiting for me when I’ve logged off for the day. The best thing about this chili isn’t the warm comforting flavors (though that’s definitely a close second), its healthy and easy to throw together, making it perfect for meal prep as well.

What You’ll Need

You’ll need ground turkey, onion, garlic, sweet potatoes, turkey broth, crushed tomatoes, tomato paste, white beans, and chili spices.

Getting Started

In a large non-stick pan, heat about one tablespoon of olive oil over medium heat, then add the onions.

Once the onions have started to brown, add the garlic and cook until fragrant, about 30-60 seconds.

Then, add the ground turkey, breaking it up while it cooks.

Once the turkey is cooked through and no longer pink, add the spices and stir to combine.

Combine Ingredients and Cook Low & Slow

Transfer turkey mixture to your slow cooker, then add remaining ingredients.

Stir to combine, then cook on low for 6-8 hours, or high for 4-6 hours.

Serve

Divide between bowls and top with desired toppings. I used tortilla strips, shredded cheese, and sour cream.

Cook Time: 4-8 hours

Ingredients

  • 2 pounds lean ground turkey (or chicken)
  • 2 cups sweet potatoes, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups turkey broth
  • 1 28 ounce can of crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 cans of great northern beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon paprika
  • 2 teaspoons cumin
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (or more or less, to taste)
  • Desired Toppings: tortilla strips, shredded cheese, sour cream, cilantro, tomatoes, hot sauce, etc.
