I love a good twist on a classic dish. Chicken fajitas have always been one of my go-to easy meals, and I often order them whenever I'm at a Mexican restaurant, so the other night, I had the idea to take a classic dinner favorite and make give it a twist! These roll-ups would be great as a dinner, or even as an appetizer or party snack. I also included two dipping sauce recipes for an extra layer of flavor.

Butternut squash is most definitely one of my favorite ingredients to cook with, especially in the fall. I feel like I'm in the minority, but I love savoring every moment of the Thanksgiving season and I can't bring myself to jump into Christmas too soon. This lasagna was inspired by Thanksgiving flavors, and is creamy and so so delicious! Seriously, I think this is one of my favorite dishes so far. For you Ricotta cheese haters (like me) there is NO Ricotta, and this lasagna would be easy to make vegetarian but omitting the turkey and adding more butternut squash. This is a great make-ahead dish to serve if you are hosting visitors over Thanksgiving week!

Shakshuka is a Mediterranean dish consisting of eggs poached in a herby tomato sauce. I originally discovered a "beefed up" version of this dish through a meal delivery service, but my husband and I loved it so much, I kept tweaking it until we created this dish that has become a staple in our household. It's comforting, filling, but the herbs and spices make it feel fresh. We tend to make this more often in the colder months, but it's a great meal to serve year round for dinner, lunch or even breakfast!
