
Yep, another flatbread! I wasn’t lying when I said my husband and I LOVE a good flatbread, and we’re always coming up with different combinations. This time, we tried out a caramelized onion and bacon flatbread, and let me tell you: it did not disappoint. This is certainly going to be a staple in our house – especially when we need a quick & tasty weeknight dinner and are in the mood for a cheat meal!
What You’ll Need
I like to keep our flatbreads super simple, for these, you’ll need 12 mini naan flatbreads, balsamic vinegar, shredded cheese – I prefer a smoky version, like smoked gouda, balsamic vinegar, brown sugar, yellow onions, bacon and thyme.

Getting Started
Preheat your broiler. Add the naan, flat side up, to the baking sheets. Broil until beginning to turn golden brown (watch carefully, the broiler can quickly burn!), they should start to look like the butter is “melting” out of the bread.

Once the naan has browned, remove from the oven and carefully flip.

Make the Topping
Add the bacon to a large skillet over medium-high heat and cook until crisp, then remove to a towel-lined plate.

Drain some of the bacon grease, leaving a few tablespoons, then return the pan to medium-high heat. Add the onions and cook until caramelized. Add the brown sugar and balsamic vinegar and cook until absorbed. Transfer to a plate.

Assemble the Flatbreads
Divide the onions evenly between the flatbreads.

Next, divide the bacon between the flatbreads.

Finally, top with the shredded cheese.

Broil until cheese is melted and bubbly, about 3-5 minutes, then remove from the oven and top with thyme.

- 3 yellow onions, peeled, halved and thinly sliced
- 1 pound bacon, chopped
- 4 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 3 cups shredded cheese, I like to use smoked gouda or smoked white cheddar
- 2 tablespoons fresh thyme leaves
